Decided to splurge for our Super Bowl meal and decided on Enchiladas. Enchiladas Verde con Pollo are my favorite so I pan grilled up some chicken breasts



and pulled them.



After this a roasted up some tomatillos, a pabalno / pasilla pepper, some jalapenos and an onion.



Once that was done and I had my sauce made I assembled 12 enchiladas and covers with some cheddar cheese.

I placed this in a pre-heated (to 325) kamado for 15 minutes.

Here are some plated shots right before we ate served with some Mexican rice, savory black beans and a Negra Modelo.



And here it is inside for eating.

These were delicious, just as suspected and so worth the indulgence.
