Never use mesquite myself since tend to cook with free wood. Presently working on a pile of pecan.

Tend to find Texans more loquacious than eloquent. Would love to tip a few beers and sip a li'l bourbon and continue this conversation in person with my esteemed colleague from the West side of the state.
 
BBQ is fun, when you put restrictions on how it's done it can get boring. I'm thankful for the different bbq regions and the popular bbq fusion that we see now.

If I were to put any rule on bbq it would be that it requires meat.
