A friend just gave me some Italian Elk sausage. Anybody every try it as a fatty? It is premixed with pork. I also got a couple pounds of ground elk...Any ideas?

I love elk meat.

I think elk is a bit sweeter than other meats so I don't sugar it as much.
With pork blended in it should have plenty of moisture and fat content to make a great fatty. Try not to cover up that great wild elk flavor.

It's not fair, I haven't had any in a couple years.
 
also try some burgers with hot pepper cheese!!

I made an elk fatty that was GREAT. It had some pork in it already but I bacon wrapped it and it came out perfectly. Since it is a little gamey you can use a stronger rub if you want.

If I'm going play with the game, use a strong rub for optimal pleasure
