Dried Beef Recipes???

I am looking in to making some dried beef or deer, not jerky, and would like to know if anyone has a good recipe to accomplish this. I am also planning on using the UDS to finish it off. I have found some recipes on the internet but they are few and far between. Any help would be appreciated.

I tried to do a search on this forum but I do not have that ability at this time.

That looks great, Bresaola looks like it would really taste good. One of the few recipes I found on dried beef mentioned skimming mold off the brine, the wife and kids would not go for that. I run a wood stove in late fall through winter and this would work out great for drying.

just out of curiosity, what do you do with dried beef? I've never heard of this, is it the same thing as chipped beef? it looks kind of like it, but homeade seems like it would be a lot better than the stuff in the jar.
 
this is right up my alley!!... well my region's alley.. different dried beef than "chipped" this is WAY better, it's called Carne Seca, my area (well tucson really) has got the perfect environment between heat and humidity, and wind and such that EL CHARRO has got this down to a science i found their recipe, and now i wanna try it meat drying cage CARNE SECA
