-starter puff pastry pie (Dennessey)

-main course chicken,bami (noodles),smoked fa chong sausage and sweet/sour/smokey veggies (Phubar)

-dessert bojo (Suriname cake) and spiked coPhee (Dennessey)


We chose to make a Surinam style dinner.
Normally the puff pastry cake would be served as empanada's but Dennessey wanted to make it his way.
Some of the ingredients are chicken thighs,peas,carrots,onion,garlic,celery,cooked egg,salt,pepper.

Chicken was marinated overnight in a soya based marinade from Surinam.
Rubbed it with The Man with the Pan.
Veggies (paprika,red onion,cucumber) were smoked and marinated in smoked lemon juice,sugar,salt,pepper.
Bami was cooked in chicken stock made out of the backbone of the spatchcocked chicken.
Mixed with the pulled meat from the backbone,smoked celery,paprika,onion,garlic,adjoema pepper,Phish sauce,oyster sauce,salt,pepper...all in the wok.

Bojo consisted out of cassava,coconut and stroh rum drunken raisins.

Drinks of the day were Surinam beer and soda.
