I think the timing on the steaks will be fine. I think you are not allowing enough time, 8 minutes for the first two course, but, I am assuming you might be having a conversation. I could be wrong here. 
I still think you will be fine with the steak even if you happen to mention a word or two through the soup course. Remember, the salad course can always come last and you can pretend you are soooo Continental.
