what ia the best way to trim them to st. louis and the best way to cut them after cooking for a rib comp? last couple of slabs i got the bones were at a angle and hard to cut nicley. thanks bbq family.
 
Use the Goggle search at the bottom of the page for some trimming instructions. I get my ribs at RD and they come three in a pack deep frozen. Takes days to thaw them out. You can't tell if they have straight bones or not until they thaw out and that is a drag. One day I will find a good butcher where I can buy them fresh and inspect them. Angled bones do present a problem.
