I took advantage of the $2.99/lb Costco Prime Brisket prices while they were in my area. Back up to $3.99/lb last time there. Got busy and this one sat in the frig a little longer than expected, but got to cooking it last night on the Assassin 24 with some Oak splits and Mesquite chunks.
Thought this brisket looked great in the cryovac, but it had an odd shape once opened. Trimmed and seasoned with S,P,G, & Seasoned Salt. Cooked for 8 hours then wrapped in butcher paper. The middle was very stubborn and would not give up. It finally did and a few other areas were a tad over, but one thing I've learned, I'll take a little over compared to a little under every time. Was super happy with the results and I'd say Brisket has surpassed a good Ribeye as my favorite meal...
I think this brisket looks like a fish, maybe an Oscar, but my wife doesn't agree...
