Contest Struggle

I've found no difference in choice vs prime cook times. I would imagine it got done sooner bc it was a 12 lb brisket that got trimmed down to 8-9 lbs. Plan for more than 6 hours with the 16 lb one and stick it in the cambro if it gets done early

Make sure you practice on the same pit you are competing with. Like others said if you have got to add liquid to the wrap. Try mixing kosmos mop with beef stock.
