I know most sites say that I have to immediately cook my turkey after cold water thawing it but can I get away with thawing it and then putting it in the fridge overnight. Was planning to thaw it wednesday and then into the fridge overnight to be cooked on Thursday morning. Is that safe.
 
Cold water thaw is just that. I thaw my turkeys in a water bath, in the fridge. Changing water every day. This is a 3 day process.
The cold water must stay cold (below 40F) or you invite bacteria

Alton Brown did it on Good Eats, so it must be safe. Just change your water frequently.
