I love making smoked cheese.
I use my BWS Chubby for that application.
I take out the removable water pan and fill with water and freeze it solid in the walk-in freezer.
Then I build a small fire in one corner of the fire chamber using charwood and maybe maple or apple wood chips.
It keeps a great cool smoke through out the "cooking" time.
Very satifactory results, sorry no pron:cry:
