I give them a quick brushing during heating phase. Unless I cooked something that really has a funky smell once it dries then I do it when I get the food up.
 
Thank you gang, I will brush off the rest of my grates tomorrow morning while I tend to the Pork Belly.
 
I dont worry about sticking, when the food is ready it will turn loose.
 
Smokers once a year clean. I get grill hot scrape and rub with a lemon. Webers I clean when crusty again burn off crust scrape and clean with plain lemon. Works excellent!
