Happy Tuesday, Pholks!
I've got a late show today, so I'll have to skip the cervecas and margaritas until the wee hours...
Today's adventure started on Sunday evening, when I fired up the kettle to grill a couple of prime ribeyes, with a sampling of Q-Salt and my standard 50/50 Santa Maria & Carne Crosta blend.
They were too big for us to finish in one sitting. Why not whip up some steak tacos for Taco Tuesday!?
A good simmer in the skillet with some onion and some bacon grease started the game nicely.
I decided to try the tortilla + queso technique I've seen on birria taco videos online...
BIG fan! Crispy sides, and pliable bottom.... :shock: or something like that.
I topped the lot with onion, cilantro, some really excellent salsa from a local Meximart, and a squeeze of lime. A good swig of Jaritos Grapefruit Soda washed it down nicely.
It was so good that I had to come back for a reattack (and I had JUST enough meat/onion for 2 more tacos)!
Off to start Day 2 of the new gig in the 505!
