This monster, Chucky, came to my house.
While I was preparing to cook something he broke out of his constraints and I had to defend myself.
I grabbed a knife and cut him in two.
This slowed him down but he kept coming. The right side was obviously the stronger side so I threw hot sauce in his face!
This slowed him down but he kept coming so I threw steak seasoning, ground coriander and ground chipotle chili pepper in his face.
This blinded the little devil and I was able to return both halves to their constraints.
I put the left half in the fridge thinking the cold would allow me to deal with it at a later time. The right half was still defiant and was yelling obscenities at me. Just as I was about to place a gag over its mouth it yelled, “EAT ME”, to me. My anger got the best of me and I did as I was told. I lite up the kamado.
And threw him on once it had reached temperature. (250)
Not wanting to eat plain Chucky I broke out some veggies to chop up.
Once I had chopped up the veggies I sprinkled on 1 tsp. of ground chipotle chili pepper. Then I poured in 1/4 cup of Worcestershire Sauce and 1 Stockyard Oatmeal Stout.
After the little fellas carcass had reached and internal temperature of 165 I placed him on the bed of veggies.
I then covered the pan with foil and placed it back on the kamado along with some appetizers. I cranked up the temp to 325 and let it cook for another 2 hours.
I then made up some Salsa Fresca.
After 35 minutes on the kamado I removed the appetizers. (These were so good)
After 2 hours the IT was 209 so I removed the foil.
And pulled the carcass apart and let it cook for another hour to reduce the liquids.
Here it is ready to eat.
I warmed up some tortillas and proceeded to make tacos out of the little fella.
And enjoyed them with a Stockyard Oatmeal Stout.
This night was a nightmare and it was nip and tuck whether I was going to make it out alive but I prevailed in THE END! :becky:
