Coated 18lb roast with EVOO. Sprinkled fresh ground black pepper, kosher salt and garlic powder.
Fired up the Treager to 400 degrees...put the roast in and lowered temp to 250. Dome thermometer and digital were off..so I flipped
it up to 275 after a couple of hours. When meat internal temp was at 125ish, I cranked the heat back up to 400 for a sear.
