Christmas Morning SPAM-URRITO!

Merry Christmas brothers and sisters! Had a great night celebrating Christmas Eve with the fam at my bro's and hope everyone did as well.

I craved a breakfast burrito and the SPAM TD is surprisingly lonely so a SPAM burrito sounded sooooo good this AM.

Of course my fave is the original SPAM

Made fresh salsa which I like minced for the breakfast burrito

Started with some tots

Then sautéed some onions in clarified butter

Cubed up the SPAM next

Fried it a bit to develop a nice crust on the cubes

Followed by scrambling some eggs

Time to assemble and the first layer was American cheese

Eggs

Spam and onions

Tots

Salsa

Back onto the CI pan to toast up to tortilla

Breakfast is served

Topped with some more salsa

And that incredible last bite

Amazing to say the least!
