I mentioned in another's thread that I was experimenting with some chicken wings by marinating them in a mixture of liquids from a jar of pepperocini and a small amount from a jar of sliced jalapenos.
The wings sat in the liquid for 24 hours in the fridge.
When I took them out they had a funky green tint to them but, I expected that.
I cooked them indirect on my gasser for about 1 1/2 hours. While turning, halfway through the cook, I could see the skin was turning more yellow.
The skin crispied up really nicely and the flavor was surprisingly good!
There was just a hint of the sweetness of a jalapeno after its cooked and not bitter at all.
I'll do this again only next time it'll be 100% jalapeno liquid.
