Hi all,

I was asked to do a drop and go for 50 guests. Half pork, half chicken (pieces).

I got the pork figured out, but was wondering if I also do 50% weight loss after the cook for chicken?

With chicken I'd go by the number of pieces and not necessarily weight, I would think.

I agree with deguerre, we always serve chicken by the piece. Priced by 3X cost of each respective type of piece. We usually do leg quarters but have done some thighs and breasts by the piece before. Have even done whole birds for special orders, hence no real "loss" in the cook process.
 
Hmmm.

Seems I may have not worded my question right.

I was wondering about the loss of weight during the cook. Jacked Up helped significantly.

The money is already taken care of.
