Chicken Dinner and the dreaded...

Yesterday I was lazy and decided to prepare the evening's meal before going in to work in the morning. It looked like this when I got home...

Pretty good, eh?

I had three cups of dried pintos, 8 cups or so water, three chopped bell peppers of varying colors, one large chopped purple onion, several good shakes of celery seed and flaked celery, a 12 oz package of chorizo and 8 chicken thighs dusted with Fiesta brand fajita seasoning rub.

Oh My Goodness - that looks unbelievable. I never thought of doing it like that. We like thighs on the grill and smoker, never done 'em in the crock pot. But I LOVE pinto's - make them all the time all different kinda' ways. We are in Houston, where pinto's are the food of choice 'round here behind anything that is meat, poultry or fish smoked.

I'm doing these tomorrow - sending the 16 year old to the grocery store now. Thanks for sharing.
