Now I was not in this conversation merely overheard it. My mother was giving out her secret and I swear she said “always use a fat yellow hen”. ....

My aunt would always use hens for her C'n'D and would talk about the yellow fat. Schmaltz is a good thing, although I usually skim a few spoonfuls off the surface. Hmm to just sample to make sure the salt and pepper level is just right.
 
Yeah, still light and fluffy but rolled out and cut into strips, vs drop dumplings (balls)
