Chicago Italian Beef with Brisket?

Has anyone made Chicago Italian Beef Sandwiches with brisket? In the past I have smoked a chuck roast and then finished in a cast iron dutch oven with garlic, onions, broth and giardiniera, but I was thinking about using a small brisket flat instead.

I suppose if you can slice it thin enough it should work. Chicago Beefs are usually made with either the top round or bottom round.

This is a pretty solid recipe https://amazingribs.com/tested-recipes/beef-and-bison-recipes/chicago-italian-beef-sandwich-recipe I usually use a deli slicer to finish it. Also- imho fat is your friend, I would't shave off all the fat.

I know this might be blasphemous on a site like this but this recipe is as solid as they come, I make it quite often https://www.allrecipes.com/recipe/229006/best-ever-slow-cooker-italian-beef-roast/ the only downside is you shred the beef in the end so the consistency will be different then a true Chicago beef sangwich.
