That looks absolutely delicious! A quick question though. Have you ever tried grating your own cheese for this dish? I ask because I've noticed that those pre-grated cheese bags contain anti-clumping agents, like corn starch.

It'd be interesting to do a comparison between packaged grated cheese and home grated cheese...
