Brisket: When to trim?

Do you trim the sides of your brisket before or after you cook it?

I'm reading/viewing this right after stuffing myself during lunch. Suddenly I'm hungry
again. The old saying of the best presentation/appearance is that you make them
WANT TO DIVE IN and eat it. Man, this absolutely defines that. If you dont even
like brisket it would be tough to say that this wasnt an appetizing display.
 
I always trim after it is cooked. The edges always seem to get overcooked and fall apart. When you trim after you can get rid of those nasty crumbly edges and have nice looking slices. Brisket was my best catagory last year.
 
those boxes look incredible....great reminder of how horrible I am at cooking brisket.
