I usually do whole packers, but this 9lb flat at Costco caught my eye the other day. It actually had a lil point on it, but was a flat. Seasoned with SPG then put it on the Assassin with Oak and Mesquite. I decided to go low and ran it at 225 - 240. Smoked for 7 hours then wrapped in BP. Probed tender at about 196*. Rest, wrapped and napped in the cooler for about 5 hours. Was really happy with the results. Made a some Smoked Apple Pie Baked Beans and 3 Cheese Mac for sides.

People often ask if you can get good bark from a GF. I'd say this isn't bad, especially at 225-240.
