Matt would have been 19 on saturday and his mom didn't want the day to go by unnoticed. So we had some family over and put the word out to his friends. A couple got back to us and said there would be about 40 of them there (plus 20 or so family, way more then we expected). I knew I was in a Catch 22. If I cooked for 60 it would be way too much, but if I didn't we would run out of food. So I opted for the 60. Even though only 40 showed up, they vowed to eat and much food as they could, 19 year olds can pack away the food!! Anyone who showed up and said they weren't eating was escorted to the kitchen where the changed their mind as soon as they hit the smell.
The menu:
Ribs
Brisket
Pulled pork (added because of the estimated numbers plus I had 2 butts in the freezer)
ABT's
Keri's Hog apple beans
Potato salad
whatever anyone else brings
From 5 oclock friday till noon saturday I was non-stop cooking. Knowing the amount of food and the cooking space I had, timing was critical. I hit the timing balls on with everything plated at 11:54.
The pron:
now I know when you are in charge of the cooking and the camera, a lot of food pron shots get missed. Here is what I was able to get
All the cookers going with extensions. Had to bring the ECB out of retirment for this one.

Best brisket I ever cooked
with burnt ends of course
ABT's were devoured
