My youngest turned 11 today and tested positive for Covid 2 days ago (2nd time). He is ok aside from a fever but due to refs, is staying home from school for ten days. I asked him this morning what he wanted for dinner and I thought sure he would say spaghetti or lasagna (homemade sauce from scratch of course), but he said he wanted Prime Rib. Ok, I have one from creekstone in the freezer..quick defrost in cold water for a few hours and a seasoning of course Montreal type seasoning and onto the Workhorse at 275 or so. 3 hours and pulled at 117 and rested. Rose to about 130 before slicing. It needed more salt into the meat, but was good and he loved it so that’s all that mattered…Q-salt and a light dusting of Todd’s Dirt. Good dinner, good day and hope you all had a good one as well!

Happy birthday to your son and hope he feels better. I know that prime rib would perk me up.
