Been putting the ol' FEC through the paces lately. I catered a 60th wedding anniversary for 125 ppl and used the FEC to cook the potatoes and beans, then used it as a food holder/warmer when I ran out of room in the Cambro. It was 111° outside. My partner and I were a little worse for wear, but the smoker worked great!
Yesterday I loaded up 135lbs of pork butts for another cook and she handled them like a champ! She held at 240° the entire cook on the 225° setting (which is my preferred cooking temp anyways). Wasnt bad for being 108 outside. We had a brown out about halfway through the cook and by the time the power turned back on, I had only lost 35° in the cooking chamber. :clap:
The 16 butts turned out great and fed alot of happy people!
