I have a pack of beef rib fingers in the freezer and looking for ideas on how to cook them. The last time I cooked them, I smoked them to done and they were chewy to say the least. This time, I'm considering smoking to color, panning them with some beef broth and butter, and braising them to finish.

Any other ideas on how to cook these?

I'm not sure what they are either. Are they strips of chuck ribs?
Looking forward to seeing what you do with them, John!

Beef rib fingers are the same as beef back ribs, what's leftover after separating the ribs from the ribeye.

In my experience they are better cooked over high heat rather than low.

I cook them like i cook baby back ribs. They always turn out great.

So let's make sure we're on the same page.... I thought rib 'fingers' were boneless beef back ribs. Often those racks have a lot of shiners because meat cutters favor the loin (aka prime rib), and when they trim out the bones, you are left with strips of in-between-the-bone meat.
