Here is one of several batches of bacon that I made over the last couple months. A shout out to Imamadman for his guidance with bacon curing. Ruhlmans seemed to salty once finished. It’s amazing to me the amount of maple taste you get from fenugreek seeds.

Here I used fenugreek seeds that I heated and crushed along with honey that I rubbed on prior to adding the cure. Tastes and smells great. But I think I’ll need to be careful frying it. Even though I rinsed the slabs well, the honey sugars seem to burn a tad if the heats to high. I didn’t have that problem not using honey. It does taste sweeter using honey though. Cold smoked with hickory.

That looks beautiful. The fenugreek is something I had to accustom myself to, it does add flavor for sure. A sweet bacon, with brown sugar or a maple syrup component is delicious. But you are correct in that you have to be careful when pan frying to avoid burning. Low and slow is the way to go.
 
Your bacon looks fantastic.I like to cook bacon in the oven,on a rack in a pan.I much prefer it cooked that way compared to frying in a skillet or on a griddle.
 
Great looking bacon. I have never strayed from the traditional but it sounds deliciously intriguing.
 
Thinking about trying some bacon myself. Haven't started that yet. Also need to set up for cold smoke.
