I fired up the Big Joe this afternoon to try my hand at a couple loaves of bread while the Pastrami brisket was cooking...

Nice video, John. I definitely like the idea of making the large batch, and then pulling off what I need to make individual loaves. Not sure if I missed it in the video, but how many pounds of dough will a single batch make?
