The in-laws came down for the weekend to celebrate my MIL’s birthday. I told her I’d fix whatever she wanted and she went with prime rib of course haha.
Here’s an 8 lb’er rubbed down with a paste made of minced garlic, rosemary, SPOGOS, Santa Maria, and EVOO
I smoked it on the Yoder at 250 for about two hours with a mix of oak and pecan pellets until it reached 210. Then, I took the diffuser plate off and cranked it up to 450 and seared the prime rib until it reached 130. Here’s before and after the sear.
And here is the final product. everyone seemed happy with it so we’ll call it a success.
