Came up with this last night. It's all pretty much made from scratch. I had some leftover smoked chicken that I had done on the PBC last week, and I decided to turn it into a smokey chicken salad for sandwiches, then I thought that would sure be good on homemade bread.
I call this "The Smokey Chicken Salad Club Sub".
Well, I have a recipe for an cheesy/herb french bread that I developed and....... anyway, here's where it all led;
The chicken and resulting chicken salad;
Used the breast and thigh meat, was about 12 ounces.
The bread. I'll post a seperate thread for that just in case someone is interested.
This is just at the end of the second rise.
In the oven
Done.
The sandwich roll, I made specifically for the Throwdown.
Came out delicious. So here is the sandwich I built.
The smoked chicken salad, cuc's, tomatoes and avacado slices
A little bacon
Some chopped green onion, sliced black olives and a little extra grated cheese, sharp cheddar and pepper jack.
Some homemade chips to go along
This thing is really a behemoth, that is a dinner plate it's on, plate comes up a little short, lol
I actually managed to eat half of this monster, and it was delicious, just the right amount of smoke flavor came through, and on the homemade bread, it was killer good.
