I have a life-long friend whose birthday is July 4th. Every year he comes home to his little hometown of about 800 that grows to several thousand on the 4th for Independence Day celebration. There is a gathering of 40 - 50 people at the house and I am always expected to bring BBQ for the mother of all pot-lucks.This year I did pulled pork:


Rolled my carcass out of bed at 4:30 am on July 3 and got the cooker fired up

Pork Butts went in at 5:45 am. Smoke is rolling 1 hour in.

3 hours in they are looking good

At 10 hours I put them in a pan and seal it up tight with an aluminum foil cover. They came out at 12 hours looking like this. Internal temp was 210 and they jiggled like jello.

They just fell apart and almost pulled themselves. After they were pulled I put them in pans, sealed them up tight, and put them in the fridge to keep for transport the next morning.

July 4th while we were all watching the parade, which included a float honoring my buddies dad (101 years old) and his family for generations of community service, the pork was back at the house in a 200 degree oven re-heating and awaiting the ravenous crowd.
