I need some help. I got suckered into bbqing for a friends birthday party which is supposed to consist of 250 chicken thighs and some shoulders and butts. my real concern is the chicken thighs. I havent ever really done them to know how long to cook and at what temps. I have 3 uds all with 2 cooking grates each. does that seem like it would be enough to get them all done up at once? I also have a nb bandera I can dust off and get going for this if I need to. any advice would be helpful. also if theres any brethren in northern cal willing to lend a fellow brethren a large smoker I would be willing to rent it for the weekend just to ensure I have enough space to get everything done at once.
