Second with a mix of Byrons Butt Rub, Simply Marvelous Sweet Seduction, and Season All.

First off the smoker after resting:

It's a Victorinox Slicing knife. Thing cuts through ribs like butter! Oh and it was 2 10lber's not 1, 20lb. :-D
