1st walk

Sorry about making you all read sideways.

Not sure where the bitter taste came from. Using Pecan wood.
 
Also, 16th overall on Saturday, not 14th. I guess I'm getting old and have CRS syndrome.
 
My thought is the rub. I had a clean fire the whole cook. All I know is I ate the hell out of it. I'm going to have to change the heat profile. I'm guessing cut way back on the pepper. I'm still in the learning process. As others have mentioned, I need to take a class.
