Hey guys, It's hunting season again and I just came back from bird shooting in the country and was starved. I remembered I had a pack of lamb chops in the freezer so i thought I'd do up a quick lamb dinner. Made a nice strong marinade for the lamb due to the short marinade time. This is what went down:
Took a couple lamb chops with belly fat still attached and tied them up... (I like a little extra fat on my lamb :thumb
Then did up a marinade with some fresh Rosemary, garlic, thyme, crushed red pepper flakes, mint, oregano, along with some hawaiian red salt, light soy and a little hoisin sauce...
Then seasoned the meat and threw if in the fridge for about 2 hours:
Then reversed seared them up with some guava wood for smoke. They came out AWESOME! Served it up with some grilled baby corn and some cheesy mashed potatoes.
Seared them up over some HOOTTTT coals... I also like my lamb with a little crisp on the fat... got them to a perfect medium rare!! :wink:
