I have only ever dealt with boneless white meat. You have now sold me on the wonders of the rest of the chicken. Added to the list of things that will cause the GF to keep me around. :)
Found a chorizo recipe online and will try soon.

When you lollipop, do you remove the cartilage from the legs?

NO I only remove the pin bone along with the skin & cartilage at the bottom of the leg.
