I ran mine for several burns at 300 degrees.
Then ramped it up to 400 degrees and did burgers a few times.
Then took it to 500 degrees to sear some ribeyes.

There is an egg forum, google will be your friend.
But there is a world of expierence here on this forum as well.
You also are a suscribing member, try the search function here on this forum.

If you aren't going to be building/getting a table quickly then get the nest. Congrats on the Egg - you will not be dissappointed.

going with the large and no didnt know that about the gaskets but answers the question about what happened to my bosses it just ripped off when he opened it after the first cook lol

it's a little difficult to sort thru all the rumors, half truths, facts, and just wrong information on the gasket issue.
the below points could be all or none of the above

- bge has stated there was a "bad batch" of felt gaskets.
- the bad batch of gaskets have double stick tape holding the gasket to the ceramic.
- high heat will cause the bad gaskets to fail
- if you have an egg with a bad gasket, bge will send you a nomex gasket for free
- some dealers are sending a replacement original felt gasket with new eggs
- gaskets can fail for a variety of reasons. this only complicates the issue. old seasoned gaskets can begin to fail (burn) with repeated exposure to flashbacks (or is it back-flashes. it doesn't matter what you call it, it'll burn the hair off yer arm no matter what it's called!)
- some people say they do not believe in the "lower temp cooks for the first few to set the gasket adhesive" theory. i say, what can it hurt?
- they say if you have a bad gasket, it'll fail anyway
- i say, there are other reasons gaskets fail and even a "good" gasket can fail if you abuse it
- spilling sticky bbq sauce on a new gasket and letting it soak in is asking for trouble
- a lot of gasket failures seem to occur on pizza cooks. the position of the plate setter directs heat and flames directly at the gasket area if you have the plate setter legs down on the fire ring

i have 5 eggs and i've not replaced a gasket yet, although the last egg i got had bbq sauce spilled all over it at eggtoberfest in atlanta. the sauce caused the gaskets to stick together upon reheating and the gaskets lost bond with the ceramic and burned in that spot. one other seasoned gasket was damaged on repeated flashbacks during a rushed preheat for pizzas. i was purposely making the egg flashback to see how it all worked. the gasket burned in a small area. still cooking with it, no problems.

do a couple of burns at 350-400 max. do not say "let's see how hot this sucker will get" on the first burn. if you load the firebox with large and medium lump charcoal pieces, and leave the top off and the bottom vent completely open, you will have flames shooting out of the dome and the thermometer lapping itself in 30 minutes.

Sometime people sell used nests. I saw one on caigslist a couple months back. Might even check the egg forum. I can't remember how much mine was.

i have nests i'm not using, but i made rolling stools outta them 8)

here's the very best advice i can give you if you have questions about the egg gaskets, warranty, or other issues.

CALL OR EMAIL THE MOTHERSHIP IN ATLANTA.

and so it is written

oh yeah, i almost forgot this part. you are gonna love that egg !

oh yeah, i almost forgot, if you get a nomex gasket, put it in the dryer for about ten minutes to preshrink it before you glue it on. i read that on the bge forum recently. seems to make sense... i think
