Those look great! What temp did you cook them?

around 1 hour at 275 and one hour at 300 or so

LOL.... I think somebody has the comp bug and is practicing!!!

wellllll... i have some kinda bug, for sure :shock:
i was trying to see if i could duplicate what i did last weekend at the ohio vet comp, but i didn't trim these much. still didn't get the bite through skin like i wanted. raising the temp more than 325 gets them too dark, but i really like the flavor of this combination. the skin seems to get 'bitethruable' after they are chilled.
 
Those look really good. I've had decent luck with bite-thru at 300.

Tsunami spin + Blues hog. That had to be interesting. I've never sauced any of my TS chickens.
