Found a good deal at Wally World on a set of beef ribs, so decided after seeing what some of you have done with 'em I would throw them on the WSM and let 'em smoke while I did my yard chores...

Removed the membrane and rubbed them up with Yum Yum rub (got the recipe here somewhere, but can't find it now) Fired up the WSM minion method with half a ring of unlit and 1/2 chimney of lit. Put 2 mesquite smoke boms and an apple chunk on top for good measure.

After about 3 hours at 240 or so I sprayed with apple juice liberally and foiled. 1 hour later, took the foil off, laid a coat of Sweet Baby Ray's (I need to use up what I got before I start making my own) on it and left her finish another 1/2 hour.

Served em up with baked potato and fresh steamed asparagus. mmm. I will do this again, but, lessons learned:

1. Half the salt in the rub. It was way too salty :eek:(or use less rub)
2. Only buy beef ribs from the butcher where you can see how trimmed they are. These were cut very thin between the bones and just about fell apart. I would have liked bigger hunks of meat in my teeth!:biggrin:
3. Don't foil, there really wasn't a need.

those look good, though not enough meat on them bones like ya said. I picked up some last week at Wal*Mart as well and had similar results. I used a recipe that called for marinating the ribs overnight in pineapple juice and woosty. They turned out very good, just not enough meat.
 
I've never gotten good beef ribs at Wally World. Just don't even buy them any more.

Yours look pretty good.
 
Look good, try different rubs or just make your own, not all of them have a lot of salt and making your own you get the amount you like. I've had pretty good luck with dino bones at Safeway. I usually wait til they're .99 # though. My last 1/2 beef I wasn't specific enough when I told the butcher I wanted the ribs so all he cut for me were short ribs?!?!?!?!
