Bag of speckled trout filets frozen in water from the freezer. Thawed overnight and did a short (1 hour) brine. Sliced some small taters thin, onions and bell peppers just for some “healthy” veggies. Fried these before the fish. Some pork n beans and we’re set! Perfect for us!

Man, that looks excellent. I can almost taste the crispy flake of the trout.
 
Looks great. I assume its sea trout (weak fish or whatever else they're called). We catch a bunch of them down here and like it quite well.
 
That is a plate of homemade goodness right there and exactly what I need more of in my life! Excellent looking meal.
