The sweetest person in the world, my Granddaughter, asked for brisket for her birthday supper. So, 28F or not, she's gonna get it...

Took what I hope is a small risk - using Kosmo's injection instead of my normal Butcher's BBQ - think it'll be okay...

Rounded up the ingredients for John Lewis' 8-3-3-1 rub and made a small batch.

Trimmed the 14lb'er up a little. Injected with the Kosmos. Hit it with mustard and pickle juice. Then a moderate coating of the rub. She looked like this:

Set the 'ole MAK for 245 and just put 'er on. Monitoring with Smoke X4 and about to hit the rack. I'll update you good folks in the morning.
 
Well, the smoker, the brisket and me survived the night...

Looking alright so far... we'll just keep cooking'.

Sorry about the craptastic photos. I used an old iPhone8 and a flashlight. Can't expect much from that gear.

Thinking about a pineapple upside down cake in some CI. We'll see.
 
I think that brisket is going to be one that your granddaughter talks about for years, and Kosmo knows a little bit about briskets, so I wouldn't worry about using that injection. I hope her day is extra special because of the effort you are putting into it!!

Recipe for the pineapple upside down cake That is Kay's favorite No one has duplicated it since her mother passed and no one ever got that recipe- go figure
 
Wrapped the brisket in BP a little bit ago. Bark looked OK. A little cold to be too picky...

Looks like my son, DIL, and baby granddaughter may not make the trek from Tulsa. Guess I'll just send them over to Jeremy's. I'm sure he's got something tasty going.

Don't blame them the country roads are pretty slick still. More left over tacos for me I guess.
