Not exactly what I had planned for breakfast, but I went with what I had. lol
I hadn't made a fatty in ages so I grabbed some stuff from home before heading to the lake for camping last weekend.
Fired up the tractor rim...
Fried a few hauraches while the wood burned down..
Gathered my breakfast fatty fixin's...
Spicy sausage, tatoe, onion, cheese stuffing, and my fatty piston..
I used my stainless piston... it was already packed in my camping gear. lol
wrapped and ready....
I couldn't find my little rack for the bottom of the oven, so I improvised. The foil pie pan worked well at keeping the fatty off the bottom and out of the drippings.
Ready to cook in the hot coals...
I put the lid on, shoveled a few hot coals on top and went fishin'.
Some of the fish from the day..
I was able to bring quite a few home for the freezer.
Ready to eat!
Some of the cheese oozed out. lol
I topped my haurache with pintos and hominy...
two slices of fatty and an egg...
Topped with pico and trimmin's...a squeeze of fresh lime and breakfast was ready!
I had planned on making Breakfast Fatty Benedict https://cowgirlscountry.blogspot.com/2018/06/dutch-oven-fatty-benedict.html
but this turned out pretty tasty. The huaraches reminded me of large sopes, they had a nice corn flavor.
