I'm able to consistently make terrible chicken on my gasser, charcoal and pellet grills. Really is quite a talent...
 
No, the Vortex. There's no point in using it unless you are cooking with high indirect radiant heat. Great for "eating" barbecue, probably not what you're after for "competition" barbecue. Putting it in a foil pan and having the Vortex anywhere but the center of the grill negates any benefit it provides, IMO. You'd probably be better off just banking the coals off to one side and cooking in the pan, then rotating the pan 180* halfway through the cook or something like that, if you wanted to do comp thighs in a pan on a kettle.
