Does ribs include Beef Short Ribs?

I wish I could find beef ribs around here but I can’t.

All of this sounds good! I love ox tail but haven’t ever smoked it. Smoked some pork belly burnt ends a couple weeks ago. I lost my taste for lamb after cutting into a leg of lamb and finding an abscess come oozing out. Can’t bring myself to try it again. Meatloaf doesn’t sound bad, how do you do it on an offset? I thought you needed temps close to 400 for that? I really want to use my Lang as I haven’t used it in a while. Chicken I would rather do on my Weber with a vortex.

I recommend Alton Brown's meatloaf recipe.

Just form into a loaf, no pan, and smoke at 250 to 275 until done.

My wife loves to slice it and sear in a fry pan to get a little crust on it.
 
Just looked at how to do pastrami and I’m not sure where to find a pre corned brisket. Any suggestions? If not, I’m gonna go for meatloaf.

I've found them at most any grocery, and I highly suggest aiming for a point vs. a flat, if at all possible.

Wally World almost always has them. Our Commissary (even in East Bumblefark, NM) has them... at least, the flats. Uhm. I've heard that Sam's Club has them.

If they're not in the meat section, check the freezer aisle (that's how we used to get them at Kadena AB, Okinawa, JP).

Shoot... you won't go wrong with the meatloaf, either.

I like smoked and grilled fish a lot. Seafood is good also. If you dont want to do that, turkey, pork chops, meatloaf, fatties, corned beef (pastrami), wings, spam, nuts, potato skins, stuffed burgers, jerky, onions with cheese, brussel sprouts with bacon, cabbage, corn. I recently had smoked bread pudding.
 
Meatloaf fatty is a must. Amp up your regular oven recipe with sauteed jalapenos.

Also, stuffed leg of lamb. I like cherry for this.

Great thread. The girlfriend is out of town this weekend, so I'm trying to decide what to smoke. There are a few good ideas in here!
