I am not by any means an expert, nor have I bought a ton of different beef, but IMO from my local options, Costco Prime Beef is by far the best value when in comes to Steaks. I frequently buy their Prime Sirloin, at times under $6.00/lb, and it is excellent. It's lean but stays juicy when cooked to med-rare. The Prime Ribeye is a little more pricey, but it's my favorite by far. Today I decided to give the Prime Strip a try at $8.99/lb. I am not a Strip guy, but after tonight's meal, I may be converted. IMO there is no reason to wait for the other stores to have sales, cause their steaks just don't stand up. I know some may say $8.99/lb isn't cheap, but compared to what I'd pay for a steak dining out, or at the local grocery store, it's a steal. And it tastes much better...
14lbs of Prime Strip
I'm no butcher, but I sectioned this big chink of meat up. Got 13 steaks. Most around 15oz - 16oz, one 18oz (for me) and a few 9oz - 10oz. Lost about 2lbs trimming fat.
Seasoned with SPG...
Steaks are done. Cooked on my Weber Performer (forgot to snap pics). I put a little unsalted butter under the steaks, then finish with salt and a little more butter on top (done after this pic), and let rest.
My plate. 18oz Prime Strip (covered with butter/drippings) and some Mushrooms. No need to fill up on tatters and greens IMO...
