I am not by any means an expert, nor have I bought a ton of different beef, but IMO from my local options, Costco Prime Beef is by far the best value when in comes to Steaks. I frequently buy their Prime Sirloin, at times under $6.00/lb, and it is excellent. It's lean but stays juicy when cooked to med-rare. The Prime Ribeye is a little more pricey, but it's my favorite by far. Today I decided to give the Prime Strip a try at $8.99/lb. I am not a Strip guy, but after tonight's meal, I may be converted. IMO there is no reason to wait for the other stores to have sales, cause their steaks just don't stand up. I know some may say $8.99/lb isn't cheap, but compared to what I'd pay for a steak dining out, or at the local grocery store, it's a steal. And it tastes much better...

I'm no butcher, but I sectioned this big chink of meat up. Got 13 steaks. Most around 15oz - 16oz, one 18oz (for me) and a few 9oz - 10oz. Lost about 2lbs trimming fat.

Steaks are done. Cooked on my Weber Performer (forgot to snap pics). I put a little unsalted butter under the steaks, then finish with salt and a little more butter on top (done after this pic), and let rest.

My plate. 18oz Prime Strip (covered with butter/drippings) and some Mushrooms. No need to fill up on tatters and greens IMO...

Wow that looks so juicy. Your Costco prices are way better than mine.
I agree on the dining out stuff. It galls me to pay for inferior meals.

shhhhh....costco prime is awesome. your prices are better than ours but still worth it for what we get.
 
I love their Prime briskets.

My location has Prime Filet, Ribeye, Strip and Sirloin, but they only carry Choice Flats. I have to admit, knowing how good the other Prime cuts are, I am very jealous of those that can get the Prime Packer Briskets from Costco. I need to find a way to get them to carry them in this area.

Managing a country club, I can get prime steaks for personal use whenever I want. BUT, I have found the Costco prime NY Steaks to be EXCELLENT and my go to steaks! I'll be headed to Costco later today to pick up a few packs and vacuum seal them for the freezer. I have yet to see full packers in my Costco, so when I get the urge to do brisket, I have our meat suppliers send over a prime packer.
 
I don't think I've ever seen a prime brisket at my Costco. Even flats. In fact, I haven't seen a packer of any type there in forever.
 
+1 to this thread in terms of the quality, and I've also never seen a packer much less prime at my Costco which stinks. I'd love to have that as an option.

I also use UMAI Dry Bags to age primal NY strip and ribeye from Costco. Turns out amazing IMO.
 
I don't get much prime selection around here.The only places I have to go shopping I don't see anything greater than choice cuts. That's a great deal though. Great looking steaks!

Only prime cut of beef I've ever got was a Prime brisket, I'm guessing the only reason why I got a prime brisket was because the store I ordered it from goofed up and they wanted to play nice. It's still one of my best briskets I've cooked even though that was only my 3-4 brisket I've ever cooked.

I could not agree more. For the $$$, they are very hard to beat. I've seen the untrimmed, whole Prime Sirloins under $6/lb. Even trimmed, I've seen them under $7/lb at times.

This little 8oz beauty I picked up trimmed, and it maybe set me back $4.00. Best $4.00 I've ever spent...

Love Costco's prime beef. We have whole packers over here on the left coast (seen 'em in Cali too). Prices can't be beat! Nothing better than smoking a prime rib for the holidays. Having said that, I often notice that the butchering on the cuts are hack jobs and wonder if they're getting the cuts that won't pass inspection by a restaurant chef. Can anyone confirm or deny that???
 
The only other stuff that is better is when I get a half cow from a local farmer. It is great to get the whole pieces and cut huge steaks!
 
I love costco prime, it is much cheaper than going to Flemings or McCormick and Schmicks. I can make steak at home 5 or 6 times for the cost of one trip to either place.

Cooked better to your specifications too, IMO. The downside to doing all this yourself is I personally look less forward to eating out. I get over it pretty fast though.

I just bought a few bags. How long are you aging them for?

I've only made one...ONE...purchase that I truly regret. And that was the prime ribeye cap pinwheel steaks. I had hoped that since they were in a pinwheel steak form that they had removed the silverskin from the whole cap before cutting and rolling. NOPE! Terrible for the money.


What made it worse was we had JUST had the prime filets the night before from Costco and they were out of this world good.


From the looks of the pics in this thread I MAY have to venture outside of my usual steak purchases(strip, ribeye, filet). Outstanding pics folks!
