Very glad it turned out so well. My wife basically had the same reaction after my first PBC cook, which was also chicken. It made her understand why I bought a cooker that looked lick a "trash can." My first PBC was the powder coated model. I now have the porcelain version and she actually thinks that one looks kind of pretty!

This is basically a snapshot into our conversation as well. Lol
 
Pork butt going on tonight to continue seasoning this guy up before attempting more complex food in the PBC. I guess I'm making it sound like a chore when I'm actually insanely excited to eat some pork butt tonight.

Just questioning your timeline....putting the butt on the PBC tonight and eating some butt tonight may be questionable.

Either way...can't wait to hear how it goes and see the PRON...

Didn't say it was dinner. It will be a late night snack as I pull it apart. It will be for dinner tomorrow.
 
[FONT=&quot]So the pork butt with no wrap turned into an overcooked pork butt. Relied too heavily on my new wireless thermometer gadget I think and made the mistake of being a slave to temp. Think I lost it in the last hour there but I had good reason: I was busy eating the best thing I've made in the PBC yet!

Prime beef short ribs from Costco. Second time they've had them out for sale at the Huntington Beach location without having to ask them for it. Last time I had to ask and it took them 15 solid minutes to figure out how to sell them to me...tried to charge me $74 for 8 bones! Anyways, these have been great every time and wound up being $33 for the two racks (8 bones). If they don't have them out, ask the butcher to see if they have them in the back.

Used the Blues Hog rub and added some additional pepper. Hung them for a touch over four hours. Simply amazing! This was the first time my girlfriend has been home to enjoy something "fresh": she now believes this is the best hobby I have ever had.

That last pic has me sold! Gotta check on those next time at Costco. Nice work!

There is a decent amount of trimming to be done but well worth it. I remove the membrane which leads to a little worry about them falling off the hooks but that hasn't happened yet and I double hook them.

There have been some nice cooks with the PBC, but the short ribs have never disappointed and have consistently been the best product. The girlfriend loves sauce but quickly decided not to use any of the five options I presented her with after one bite with no sauce. The bark was great and the best one that I've produced with the PBC.
 
So I started my pork butt at 4:30 PM. Still rolling a little higher than I'd like. I think it wasn't climbing as high as I thought it should after 15 minutes and I cracked the lid a bit for 3-5 minutes and it jumped from 247 to 276. Then it climbed to 310 and has been in this range the majority of the night. I closed the damper a bit and it went around 305. No second guessing it next time. Could also be the Stubbs and a few small chunks of apple wood.

But the kicker of the night was while mowing the lawn my son decided to play fireman Sam and put out the fire. Well he didn't seem to affect the cook and it only dropped a couple degrees. But I'm freaked out that maverick might get wrecked as it was hooked to the handle.

By the way, I just realized I have hit the 1000th post point in this thread. Bob is in 2nd place with 477 posts. Sako (ssv3) is in a close 3rd with 450 posts. I'm not going to mention who's 4th but he doesn't (can't) post here anymore and doesn't Appreciate the PBC very much anyway....kind of hard to though when you dont own one. You boys need to start posting more to catch up!.....lol. :becky:

Seems the butt will be ok, my Maverick is still communicating so hopefully it's ok. I'm foiled and pushing through. Thinking 11:15-11:30 and she'll be ready to rest.
 
Turned out great. Would use less of Noah's rub as it seems quite saltier than other rubs I've used. But the smoke ring was beautiful and the flavor is great. I can't wait till Thursday to dig in when my dad arrives.

would you be able to get me a measurement please of your adaptor(outside diameter), the XL grill dome's are out of stock here in the UK and I can possibly get my own made.

It would be real easy to fabricate an adaptor. The O.D. is 35.25 mm or
~1 3/8 inch, the I.D. is 30.4mm.

I would certainly fab the mounting plate so that the adaptor sits toward the bottom of the draft port rather than the top as the XL adaptor does. I may modify mine at some point although it seems to work just fine as it is.

Reverse engineer the all purpose rub.

Turned out great. Would use less of Noah's rub as it seems quite saltier than other rubs I've used. But the smoke ring was beautiful and the flavor is great. I can't wait till Thursday to dig in when my dad arrives.


Has anyone tried to reverse engineer the all purpose rub? It's my go to rub ( along with KC MasterPiece classic sauce ) but I think it's a bit too salty, maybe 15-20% less salt.

Hi mate, thanks very much for the reply, and just so I'm clear on this, the party Q fits INTO the adaptor, and not OVER the adaptor ie a male-female type connection. We use a stainless steel pipe 1" schedule 10 which works out at 33.40 OD and 29.18 ID. That's definitely in the ball park, and with a thick O ring on the party Q would seal it fine.
Will let you know how I get on with it.
