Hi guys. I have tried several recipes for smoked baked beans and they are all fantastic. People always eat all I bring. I am not looking for a recipe as I have currently been using Kerris bean recipe from these forums with a couple tweaks. But I have been itching to try something different to this recipe and wanted some opinions. First off when it comes to baked beans, of the 3 fruits, does pineapple, apple, or peach tend to compliment the beans better than the rest or is it always a personal opinion? I mean if you made 3 batches of beans with the exact same recipe except using different fruits in each pot, would one win hands down more often than the others in a taste test?

Another question i got is how much flavor does a little bourbon add to a batch of beans? The recipe I have been using does not use bourbon so if I added some what would I notice different? Be gentle here as I drink beer and am not a whiskey drinker. To me that crap tastes like gasoline. :tongue: But in a pot of beans it may or may not add something special?? Would it be enough of a difference that side by side you would taste the difference? How much bourbon do most people add when they do use it? 1/3 cup? 1 cup?

Again guys don't need recipes just want some facts about beans to help me try to add a little different variety to what i have been making.
 
Wampus has an awesome Bake Bean Recipe on here Uses peach pie filling and Burbon I would think apple would be good too

I wonder if alternating between different fruits means you should alter some other ingredients as well due to flavor differences. Pineapple is kinda tangy where as apple and peach are more mellow. I like all of them myself.
 
I have made Wampus beans many times

you will not taste the Bourbon, I can guarantee you that.

I dont know what it does to the flavor, but you would never know there is Bourbon in it

It only uses a few ounces anyway
 
I don't know about fruit, but I can speak to bourbon... I would add it toward the beginning if you're not looking to taste the actual bourbon flavor.. Like sauté the onions/garlic etc in bourbon before adding the rest of the goodies. It adds a really nice flavor without being "boozy"

I'm not much into standard pork-n-bean. Having said this I've tried the Wampus Peach Bourbon Baked Beans and they are awesome. (See link below) I've not tried any other recipes so I can't speak to the other fruits. Also, like you I'm not much of a hard liquor drinker so I'm not sure what the flavor is that the bourbon adds. I do know that everything I add it to seem to come out great so I wouldn't hesitate to add it if the recipe calls for it. My $.02

Thanks for the replies. I hate to go buy a 30 dollar bottle of good bourbon just for a few tbsp or whatever.
 
As much as I'm ashamed to admit it, I've never made Wampus' beans, mainly because I never have bourbon in the house. However, I would think that you could swap out peach pie filling for the apple pie filling in the hog-apple beans with excellent results.

Another thing I've been doing lately is using a mixture of beans, I'll just go to the store and buy a can of black, a can of baked, and sometimes a can of chili beans. Just adds a little different flavor, but it looks much better than plain old bushes beans.
 
Kerri's beans are da bomb and that's what I been making for some time but kinda wanna personalize them a bit is all. Don't wanna change the experience just maybe add a little something. I think for my next batch I am going to try smoking my bacon then crumbling it up instead of letting it cook in the beans. As far as the beans....I would be interested in trying from scratch but I am too wimpy so I just stick to the recipe and use Bush's. I wouldn't even know how to replace all the flavor already in bush's if I sta r ed with a bag of beans. Sounds interesting though

For cooking it is MHO that you don't need to buy the good stuff. I went with the Costco brand and everything I use it in turns out great.

I usually do simple...either Bush's Original or semi-rinsed can pintos, rinsed baby blacks, granulated garlic, onion & red / orange bell small chop.....

You can add chunked up sausages (pre-cooked) or leftover pork of some kinds....

Put in last 3~5 hours of a butt cook....still too much liquid.....ladle some out & stir in....

These are not as complex as Wamp's & others, but go together quick....just the chopping of stuff takes a little time......
 
I am really tempted to smoke my bacon for this next batch but can anyone tell me if not having the bacon grease in the beans will detract from the flavor? I guess I could catch the grease in a drip pan on the lower rack.....

Maybe par cook the bacon so it gets done enough, but still adds in flavor?


If your cooker can set up with an undeneath rack, cook bacon all the way & drip ribs or butt into it for flavor...or cook the bacon part way, then stick it over the pan to drip part of the time & chunk in near the end?

par-tial....cook part way, not all the way done.....I was kinda confusing in that previous post....:crazy:

1) maybe cook the bacon all the way & chunk into the beans near the end, a little dab of bacon grease thrown in for flavor

2) maybe cook the bacon part way, chunk up & add in maybe half way into the cook, less grease, still some flavor

3) maybe cook the bacon part way over a drip pan, then the rest of the way over the bean pan, more drippin's & chunk into beans at the end....

Kind of a long answer, but it will add to the flavoring, as far as I've known or done.....just don't want to get them too overloaded. & greasy.....

Bacon fat is a good flavor if not overdone.....regular sweet potato chunks, garlic, bacon fat & maple syrup....and some mild rub....
