Here is a pretty tasty side dish. I don't have amounts. I just wing it.

Cut sweet potatoes, a couple of stalks of celery, and an onion into bite sized pieces. Season them with oil, salt and pepper. Put them in the smoker (in a pan) at 275F for about an hour until they are tender.

Remove them from the smoker and let them cool. Either use your favorite vinaigrette or make one up like what I do using salt, pepper, garlic, honey, olive oil and balsamic vinegar.

Add whatever else to the salad that you like. This one has golden raisins, grapes, pecans, chopped scallions, and a couple of other things I can't remember. :) Add the dressing, mix well, serve.

There is a hint of smokiness and a nice bit sweetness from roasting in the smoker.

I smoked 6 big ole sweet taters yesterday to make smashed sweet taters.I like the shuttle hint of smokiness it gives them.
 
Thank goodness I can still have sweet potatoes. I may have to give this idea a try.

Bo, you have been on a roll with great recipe ideas lately.
